Overnight
Breakfast Casserole

This traditional breakfast casserole is great
anytime of the year, but especially around the holiday’s or when overnight
guest are expected. Just mix the ingredients together the night before,
refrigerate and pop into the oven the next morning while you’re reading the
morning news! Serve with fresh brewed coffee and a compote of seasonal fruit.
Yields: 6 servings
Ingredients
½ cup chopped onion
2 tablespoons margarine or butter
3 cups unseasoned bread cubes
6 ounces Canadian bacon, cut into bite-size
pieces
1-1/2 cups shredded sharp cheddar cheese
4 large eggs or 5 medium eggs, beaten
½ teaspoon dry mustard
2 cups low-fat milk
Directions
- Place onion and margarine in microwave
safe dish, cover and cook on high for 1 minute.
- Spray 2 quart baking dish with cooking
spray, then add bread cubes.
- Top cubes with ham, onions and cheese.
- In a separate bowl, beat together eggs,
milk and seasonings. Pour over bread cubes, cover and refrigerate
overnight.
- Bake, uncovered at 325ºF for 1 hour. Let
stand 10 minutes before serving.
Although
chopped ham, bacon or sausage can be used in this casserole, Canadian bacon
contains less than half the fat found in most cured bacon, sausage or ham. If
you wish to reduce the fat further, cook the onions in a small amount of
water, use two whole eggs and four egg whites, fat reduced cheese and skim
milk.
